Kamal Kakdi ( Bhe) Paneer :
Kamal Kakdi is the Hindi name & Bhe is the Sindhi word for Lotus stem.
This recipe is served in Indian homes on special occasions when we have some special guests.
It tastes good as it is a little spicy and makes a really delicious lunch.
Mostly served with roti or steamed rice.
Ingredients:
Kamal Kakdi (Freshly peeled and diced Lotus Stem)------------- 250 gm
Potatoes------------------------------------------------ 100 gm
Onion(Chopped)-------------------------------------- 1
Cumin Seeds------------------------------------------- 1/2 tsp
Tomatoes(Chopped)---------------------------------- 3
Paneer( Cottage Cheese)---------------------------- 200 gm
Green Chillies( Finely Chopped)------------------- 2
Cumin Powder----------------------------------------- 1 tsp
Coriander Powder------------------------------------- 1 tsp
Turmeric Powder-------------------------------------- 1/2 tsp
Red Chilly Powder------------------------------------ 1/2 tsp
Ginger Paste-------------------------------------------- 1/2 tsp
Garam Masala----------------------------------------- 1/2 tsp
Salt------------------------------------------------------- to taste
Oil--------------------------------------------------------5 tblsp
Method - Kamal Kakdi ( Bhe) Paneer :
2. Cover the lid and let it whistle for 2 times.
3. In a pan add some oil and when it is hot stir fry the Potatoes.
4. Now keep them aside.
5. Now in another pan pour the oil, after it is hot add Cumin Seeds.
6. When they starts crackling add chopped Onions and fry them till they are golden brown in colour.
7. Add Turmeric Powder, Tomatoes, Green Chillies, Cumin Powder, Coriander Powder, Ginger Paste, Red Chilly Powder and Salt.

8. Stir fry till the oil is separated.
9. Now add fried Potatoes, boiled Kamal Kakdi and cubed Paneer. Fry for 2 minutes.
10. Add 1 cup of water and Garam Masala and cover the lid.
11. After 2-3 whistles it will be cooked.
12. Serve Kamal Kakdi ( Bhe) Paneer hot with Roti or steamed rice.
