Chole Chawal |
It is a classic Indian dish having tasty white Chickpeas Gravy
with Rice.
Ingredients for Chickpeas Curry:
Chickpeas(soaked in water overnight)--------------------250gm
Onions(chopped)---------------------------------------------1 cup
Tomato Puree-------------------------------------------------1/2 cup
Ginger Paste---------------------------------------------------1 tbsp
Garlic Paste----------------------------------------------------1 tbsp
Sugar------------------------------------------------------------1 pinch
Coriander Powder---------------------------------------------1 tsp
Garam Masala-------------------------------------------------1 tsp
Turmeric Powder----------------------------------------------1 tsp
Red Chili Powder----------------------------------------------1 tsp
Clarified Butter(Ghee)----------------------------------------1 tbsp
Cinnamon Stick------------------------------------------------2 inch
Cloves-----------------------------------------------------------2
Bay Leaf--------------------------------------------------------1
Salt---------------------------------------------------------------to taste
Oil----------------------------------------------------------------3 tbsp
Method for Chickpeas Curry :
1. Pressure cook the chickpeas along with 1 glass of water, 1/2 tsp
turmeric powder, 1 tbsp oil, salt, sugar, 1/2 tsp red chili
powder.Drain the water and keep aside for latter use.
2. Heat 2 tbsp oil in a heavy bottomed pan and add bay leaf, cloves,
cinnamon stick in it. Saute for few seconds.
3. Add chopped onions in it. When onions are golden brown in
color add 1/2 tsp turmeric powder, salt, ginger paste, garlic paste,
1/2 tsp red chili powder and coriander powder. Cook for 3
minutes in low flame.
4. Now add previously boiled chickpeas and 1 glass of hot water.
Let it cook for 6-7 minutes.
5. Lastly, add garam masala and 1 tbsp clarified butter. Cook for 2
minutes and serve hot with rice.
Ingredients for Rice :
Basmati Rice(soaked in water for 1 hour)-------------------1 1/2 cup
Peas---------------------------------------------------------------1/4 cup
Cumin Seeds-----------------------------------------------------1/2 tsp
Cloves-------------------------------------------------------------4
Green Cardamom------------------------------------------------4
Star Anise---------------------------------------------------------1
Oil------------------------------------------------------------------2 tbsp
Salt-----------------------------------------------------------------to taste
Method for Rice :
1. Heat oil in a pan.Add cumin seeds, cloves, green cardamom and
star anise in it.
2. When cumin seeds starts crackling and star anise becomes dark
brown in color then add peas.
3. Cook in low flame for 2 minutes.
4. Now add rice and salt in it. Stir for 2 minutes and add 3 cup of
water.
5. Turn off the heat when rice is well cooked.
