Spicy Chicken Curry/ Chicken Masala

It is one of the most popular dish all over the world. It can be served with any Indian bread ( like Naan, Roti or Paratha ) or rice.

Ingredients:

For Marination:
Chicken(Cleaned and cut into pieces)-------------------1 kg
Curd----------------------------------------------------------2 tbsp

Oil-------------------------------------------------------------2 tbsp
Salt------------------------------------------------------------to taste
Turmeric Powder-------------------------------------------1 tsp
Coriander Powder------------------------------------------2 tsp
Red Chili Powder-------------------------------------------1 tsp

For Curry:
Onion(Chopped)--------------------------------------------1 1/2 cup
Tomato(Chopped)------------------------------------------1 1/2 cup
Green Chili Paste-------------------------------------------2 tbsp
Ginger Paste-------------------------------------------------2 tbsp
Garlic Paste--------------------------------------------------2 tbsp
Cinnamon Stick----------------------------------------------4
Green Cradamom--------------------------------------------4
Clarified Butter(Ghee)--------------------------------------2 tbsp
Turmeric Powder--------------------------------------------1 tsp
Oil-------------------------------------------------------------4 tbsp
Salt------------------------------------------------------------to taste


Method:



1. Firstly, marinate the Chicken pieces with curd, oil, turmeric
    powder, coriander powder, red chili powder and salt. Keep it 
    aside for 1 hour.

2. Heat 2 tbsp of oil in a pan and fry onion in it till they are golden
    brown in color.

3. Now add turmeric powder, tomatoes, ginger paste, garlic paste
    and salt in it.

4. Cook in low heat until the tomatoes are soft and rawness of garlic
    is gone. Turn off the gas.

5. Now, in another pan add 2 tbsp of oil.

6. When the oil is hot add cinnamon stick and then add the
    marinated chicken along with marinade in it.

7. Cover the lid and cook in low flame while stirring occasionally.

8. When the oil separates, add the mixture from the first pan and
    mix well.

9. Add clarified butter(Ghee) and cook for 2-3 minutes.

10. Add 1 cup of hot water and let the chicken cook for 5 minutes.
      Turn off the heat.

11. Enjoy hot and spicy chicken curry with naan, roti or rice.
